Coffee plumcake

Discover how to prepare a tasty coffee plum-cake, to be eaten at any time of the day, even for breakfast!

  • Brown sugar 150 g
  • Softened butter 150 g
  • Plain white flour 200 g
  • Eggs 3
  • Dark chocolate 40 g
  • Baking powder 1 sachet - 16 gr
  • Short espresso coffee 50 ml

    1.Grind the sugar

    Finely grind the brown sugar. Pre-heat oven to 180°. Line a cake tin for the plum-cake with oven paper.

    2.Melt the Chocolate

    In a saucepan, melt the dark chocolate with espresso coffee.

    3.Whip eggs, butter and sugar

    In a bowl, whip the eggs for a few minutes, then add the ground brown sugar, softened but not melted butter, and continue to whisk the mixture.

    4.Add flour, baking powder and chocolate

    Sieve in the flour and baking powder to the egg mix, mixing well. Then, add in the melted chocolate and coffee mix, stirring constantly.

    5.Bake

    Pour the final cake mix into the plum-cake cake tin and place in pre-heated oven. Cook for 35 mins. Leave to cool before serving.
